Bob's Red Mill Cornbread Recipe
Happy Thanksgiving! I hope this day is finding you well. 'Tis the season to make my famous gluten-free cornbread sausage stuffing. I really shouldn't say "my" because it is really my mother who came up with this recipe years & years ago when I was a child. She most likely learned it from her mother, making it a family tradition. Once I went gluten-free, we changed it from whole wheat bread to gluten-free bread, which was so-so. I decided the following year to try cornbread and that was the ticket! Since I started using the cornbread, I had been making my own following the recipe on the back of the Quaker corn meal box. This year we are trying out Bob's Red Mill gluten-free cornbread mix. Why switch? Simplify is my middle name these days. Plus, I love a chance to try products that I haven't tried in the past, especially if it is from a company that I love, like Bob's Red Mill.

I love that Bob's cornbread mix is designed to also be dairy-free. The add-ins have options as well, so that dairy-free options can be used. To the mix I added:
- 1.5 cups of almond milk (any milk works)
- 1/3 cup light olive oil (melted butter can be used)
- 2 eggs (while I used real eggs, I bet flax eggs can be used to make it egg-free/vegan)
I simply added all of the ingredients to my KitchenAid mixer, mixed for 60 seconds, poured the batter into the pan & popped it into the oven. The bag said to bake for 25 minutes in a 9×9 pan. I used an 8×8 pan and it took a little longer because it was deeper – more like 35-40 minutes. Since I was using it for stuffing and it needed to be dry, I wasn't concerned about it being overcooked. Had I just been eating it alone, I probably would have taken it out sooner.
Once the cornbread was cooled, and I snuck a piece, I let it sit out overnight without covering to help dry it out. It is the perfect texture & flavor for a hearty chili on a cold winter day. To use this cornbread for our family cornbread sausage stuffing, click here.
